BAKERY-STYLE EGGLESS DOUBLE CHOCOLATE MUFFINS
These eggless double chocolate muffins are super soft, rich, and loaded with extra chocolate chips. They come together in one bowl with basic ingredients, making them the ultimate quick treat for chocolate lovers.

INGREDIENTS
2 cups (240g) all-purpose flour
½ cup (42g) unsweetened cocoa powder
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 cup (170g) semi-sweet chocolate chips (mini or regular)
½ cup (120ml) neutral oil (vegetable, canola, or sunflower)
1 cup (200g) granulated sugar
1 cup (240g) sour cream or plain yogurt
½ cup (120ml) milk
1 tsp pure vanilla extract

INSTRUCTIONS
Preheat your oven to 425°F (220°C) and line a 12-cup muffin tin with paper liners. Lightly spray the inside of the liners with non-stick cooking spray so the muffins release easily.
In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Stir in the chocolate chips so they are coated in the flour mixture (this keeps them from sinking to the bottom).
In a large bowl, whisk the oil, sugar, and sour cream (or yogurt) until smooth and completely combined. Pour in the milk and vanilla extract, whisking again until even.
Add the dry flour-and-chocolate mixture into the wet ingredients. Fold gently with a spatula just until the flour disappears. The batter will be quite thick—be careful not to overmix, or the muffins will lose their tender texture.
Divide the thick batter evenly among the 12 muffin cups, filling each one right to the top for maximum lift.
Bake at 425°F (220°C) for 5 minutes, then lower the temperature to 350°F (180°C) without opening the oven door. Bake for another 13–15 minutes. Start checking around the 12-minute mark—a toothpick inserted into the center should come out clean or with a few moist crumbs.
Let the muffins sit in the pan for 3 to 5 minutes, then move them to a wire rack to cool completely.
Tips for Success
Measure accurately: A kitchen scale gives the best results. If using measuring cups, fluff your flour with a fork, spoon it into the cup, and level it off with a knife.
Watch the mix: Fold the batter only until the dry patches vanish. Overworking the batter creates gluten, making the muffins tough instead of fluffy.
Keep the oven door closed: Don't peek when turning down the temperature. That initial burst of high heat gives you those tall, bakery-style tops.
Storage
Room Temperature: Keep in an airtight container for up to 4 days.
Refrigerator: Store in a sealed container for up to 1 week.
Freezer: Wrap well and freeze for up to 1 month. Thaw at room temperature or warm briefly in the microwave.
