CARAMELIZED LOTUS SEEDS

These caramelized lotus seeds are a delightful Indian snack featuring makhana (fox nuts) coated in a crunchy, sweet layer of melted jaggery (gur). The resulting treat is a satisfyingly light, airy, and deeply flavorful snack, perfect for satisfying a sweet craving.



INGREDIENTS

1 cup grated jaggery

2 cups fox nuts

¼ cup white sesame seeds

2 tablespoon ghee



INSTRUCTIONS


Begin by placing the sesame seeds in a dry pan. Dry roast them for about 5 minutes, stirring constantly to prevent them from burning. Once they are lightly toasted, remove the seeds from the pan and set them aside. Next, in the same pan, roast the fox nuts (makhana) for approximately 5 minutes or until they become crunchy and snap easily when tested. Remove the makhana from the pan and set them aside as well.


Add the grated jaggery to the same pan and stir constantly over low to medium heat until it fully melts. Continue cooking the jaggery, stirring occasionally, until its color darkens slightly and its temperature reaches 170°F. If you do not have a thermometer, you must test the syrup by first removing the pan from the heat and then adding a tiny drop of the jaggery to a bowl of cold water. It should set immediately, and you should be able to break it with a crisp snap. Once the jaggery is properly cooked, switch off the heat. Add the ghee and stir it in thoroughly; this will add a lovely shine to the coating.


Immediately add the roasted makhana and sesame seeds to the jaggery mixture. Quickly and thoroughly mix everything around until all the makhana is fully coated in the syrup. Drop the mixture onto a greased plate or baking mat to cool down completely and harden. Once the Gur Makhana is cooled and hardened, you can easily break the pieces apart with your hand into individual, crunchy bites.
