CHOCOLATE CHIP MINI CHEESECAKE

A delightful dessert that is a perfect treat and easy to make . Enjoy this perfect cheese cake made with cream cheese, cracker crust, chocolate chips and chocolate ganache.

INGREDIENTS


CRUST

1 cup cracker crumb ( you can use cracker biscuits and grind them)

3 tablespoon unsalted butter, melted

2 tablespoon light brown sugar (use this only if you are using cracker biscuits that have no sugar added)

½ teaspoon ground cinnamon


CHEESECAKE

2 tub cream cheese (180g X 2)

½ cup sugar

¼ cup brown sugar

2 eggs

2 tablespoon Greek yogurt

1½ teaspoon vanilla extract

2/3 cup chocolate chips


CHOCOLATE GANACHE

1/2 cup whipping cream

2/3 cup chocolate chips


INSTRUCTIONS


TO MAKE CHEESECAKE:


In a bowl combine cracker crumbs, melted butter, light brown sugar ,if used, and cinnamon.


Grease a muffin tray with butter or line with muffin liners and set aside.


Spread the crust evenly in the muffin pan and press.


Tip : To press evenly , you can use the back side of a measuring cup and press them gently.


Preheat the oven to 180C.


Put cream cheese, sugar and brown sugar in a large bowl and mix until creamy . Now add the eggs one by one and combine using the hand mixer.


Next add the Greek yogurt and vanilla and mix until well combined and lastly stir in the chocolate chips.


Spread this cheesecake mix over the cracker layer and bake for 14 min.


Tip : To ensure that the cheesecake layer does not crack, do not open the oven immediately. leave the baked cheesecake muffins in the oven for about 5 to 6 minutes before you take them out.


Take them out of the oven to cool completely and once cooled, remove them from the muffin tray. You can out them in the fridge for faster cooling.


The muffin will sink once cooled.


TO MAKE CHOCOLATE GANACHE:


Put heavy cream in a pan and heat it for until it is about to boil. add the chocolate chips. and keep it covered for the chips to melt. Else you can add the chocolate chips in the pan while heating the cream.


Spread evenly over the cheesecake. Enjoy !!!
