Cook Time: 35 mins
Proofing & Resting Time: 3 hrs 15 mins
Total Time: 4 hrs 20 mins
Servings : 12 slices
INGREDIENTS
500 g bread flour (3¾ cups)
225 g cold water (<1 cup)
115 g cold milk (½ cup)
40 g sugar (3 tbsp)
25 g unsalted butter (1¾ tbsp)
9 g sea salt (1½ tsp)
1½ tsp instant yeast

INSTRUCTIONS
Start by combining your bread flour, sugar, instant yeast, cold water, and cold milk in the stand mixer. Knead on low until a shaggy dough comes together, then cover and give it a quick 30-minute rest.
Add the sea salt and knead for a minute and then add butter. Keep mixing until smooth. Shape into a smooth ball, place into a lightly oiled bowl, and let it rise for about an hour until doubled.
Gently turn the dough out and divide it into 3 equal portions. Roll each into a ball, cover with a damp towel, and rest for 15 minutes. Next, flatten each ball into an oval, roll it tightly into a log, and let them rest covered for another 15 minutes.

Turn each log 90 degrees and roll out again into a long rectangle. Tightly roll them up from the short end, just like a cinnamon roll. Place all three logs side-by-side in a greased and floured loaf pan, cover, and let them rise in a warm spot for 1 hour until 90% full.
Preheat your oven to 375°F and bake for 30–35 minutes. Once done brush generously with melted butter, and let it cool for 15 minutes.
