INGREDIENTS
½ cup flax seeds
½ cup pumpkin seeds
½ cup sunflower seeds
1 tablespoon sesame seeds
½ tablespoon chia seeds
salt, optional
½ cups plus 1 tablespoon boiling water
1 tablespoon olive oil
A drizzle of honey ,optional
INSTRUCTIONS
Preheat your oven to 180°C/350°F. In a medium mixing bowl, combine all the seeds and pour the boiling water over the top. Stir thoroughly and let the mixture hydrate for 5 minutes, mixing once or twice to activate the natural binders.
While the seeds rest, prepare a baking sheet by lining it with parchment paper.
Once the seeds have thickened, stir in one teaspoon of oil along with your desired seasonings (such as salt).
Transfer the seed mixture onto the prepared pan. Using a spatula or the back of a large spoon, spread it into a tight, even rectangle. Press down firmly to pack the seeds together and pat the edges. Finish by lightly brushing the top with oil, a sprinkle of flaky salt, and a drizzle of honey if desired.
Bake until the crackers are golden — about 30 minutes. Watch closely to ensure they do not burn.
Immediately remove the tray and slide the parchment onto a cutting board. Using a sharp chef's knife, quickly and firmly slice the sheet into individual crackers.
Place the tray back into the turned-off oven for an additional 30 minutes. The residual heat will crisp the crackers without over-browning them. Transfer to a wire rack to cool completely.
